Peanut Butter Chocolate Chip Muffins

This past weekend I went to visit my boyfriend, Collin, and I always go to his house bearing gifts baking! I was recently flipping through one of those "Lifestyle" magazines that Walmart gives out for free, and came across a recipe for Peanut Butter Chocolate Chip Muffins. I'm allergic to peanut butter, but I know that Collin loves peanut butter and chocolate, so I decided to bake them (along with some Smore Squares) for him and his family! (Best Girlfriend Award?)

I love to bake, so I thought I would start blogging about what I bake too? Why not?

Anyways, I found another recipe for these muffins online and slightly modified it, so here it is!

  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup of peanut butter
  • 2 tablespoons butter (softened)
  • 1 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1 large eggs
  • 3/4 cup milk
  • 1 cup semi-sweet chocolate chips
  1. Preheat oven to 375ºF. Line 18 muffin cups.
  2. Combine flour, baking powder and salt in a small bowl. Beat butter, peanut butter, vanilla extract and brown sugar in a larger bowl until creamy. Add eggs and milk; beat until smooth. Add flour mixture to peanut butter mixture; beat until just blended. Stir is chocolate chips. Spoon batter into muffin liners (filling 3/4 full)
  3. Bake for 18 to 20 minutes. Cool in pan for 5 minutes; remove to wire racks and let muffins completely cool. Store in airtight container.

My least favourite part about baking.. washing the dirty dishes.. 

Although I couldn't eat them (stupid allergies), they looked delicious, and they were a hit with Collin and his family! Success!
